  1. Toast your pine nuts in a small pan on low for 5 minutes until light golden brown. Then chop all your ingredients and add to a large salad bowl.
  2. I call this my favorite weekend salad because I love to make it on over the weekend when I'm relaxing at home, the colors are so beautiful and it is so delicious! :)
