
Baked Eggs with Roasted Tomatoes
Baked eggs with tomatoes and any other ingredients is such an easy, healthy and delicious breakfast! All you need are small baking dishes that are heat safe for the oven, it will say it on the bottom. Then simply spray coconut oil cooking spray ( or you can use olive oil ) on the bottom and add the tomatoes. Next, spray the top of the tomatoes with more cooking spray and add some salt and pepper and bake at 375 degrees for about 15 minutes. Meanwhile, get your other ingredients ready, any meats or veggies you like – I used chives and Canadian bacon.
Once the tomatoes are roasted take the dish out of the oven and add the other ingredients and then carefully crack the eggs over the top. You can then top the eggs with some more salt and pepper and sometimes I add a little parmesan cheese! :)
Last, put the dish back into the oven still at 375 and cook another 10-15 minutes until the eggs set and enjoy! This is breakfast is so delicious and you can get as creative as you want. :)
