Better for You Banana Bread!!!!!

I LOVE banana bread and it’s so easy to make and can be very nutritious too! I always make it when I have bananas left over that are very ripe and about to go bad. The ripe bananas are a perfect way to use them up and make something everyone will enjoy. This is a healthier version of the classic that I make at home all the time and it is so amazing you won’t believe it!

3 very ripe bananas- peeled


1/3 cup melted butter – I use 3 tablespoon real butter and 1 tbsp light butter ( Brummel & Brown with Yogurt Butter )

1/2 cup sugar



1 egg – beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 tbsp healthy creamy peanut butter

1/2 cups of all-purpose flour

3/4 cup Gluten Free Whole Grain Oat Flour – Bob’s Red Mill Brand

1/4 cup Organic High Fiber Coconut Flour-Bob’s Red Mill Brand

Preheat the oven to 350° and butter or spray with cooking spray butter a loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Next, stir the melted butter into the mashed bananas and stir in the sugar, egg, and vanilla extract.  Then add in the baking soda and a pinch of salt and mix again. Last, mix in the flour a little at a  time and mix well until smooth.
Pour the batter into your buttered loaf pan and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean and enjoy!!!! This recipe is so easy and delicious and you can’t stop eating it!!! :)  I serve it with the same light yogurt butter as in the recipe above. :)
