The Perfect Soft Boiled Egg!!!!

When I think of a soft boiled egg it always reminds me of my mom’s dad who absolutely loved them! My grandfather would come into town and my mom would make him one and it always fit perfectly into a shot glass in the morning. :) Now that I’m an adult and a mom my daughter Laila loves them and so I have mastered an easy way to get the perfect soft boil egg. The way I serve them in my house is an any small glass that I fill half way up with dry rice so it stays. Here is my easy method :

Get a small pot of water and bring it to a boil. Then place the egg into the water and let it cook for exactly 5 minutes – set your timer! :)  Then turn off the heat and rinse under cold water for just second and then holding the egg in your hand in a kitchen towel tap the side of the egg at the top with a teaspoon and then with a sharp knife cut the top off. Top the egg with some salt and pepper, get a piece of toast and a small spoon to eat it with and enjoy!
