
Huevos Rancheros
I wanted to share with you guys and easy and impressive looking breakfast that is a favorite here in my house! :) I love to order Huevos Rancheros when I’m visiting Mexico or any great restaurant that has it on their menu. This is a version I make at home that is so quick, but so delicious and healthy!
WHAT YOU NEED:
Eggs
Corn tortillas
Cilantro – chopped
Sliced tomatoes
Sautéed Onions
Chipotle Salt – or Salt and add Chipotle seasoning
Pepper / And a bit of crushed red pepper
Salsa – red or verde
Limes
Extra virgin olive oil
First, sauté your onions in some olive oil with a bit of salt and pepper until tender and then set aside. Next, cook your eggs in the same pan you did the onion and season them with your chipolte seasoning and salt and pepper and do not flip them – cook on medium/ low heat for about 6 minutes until firm. Then in a separate pan heat your corn tortilla on both sides and then add them to your plate. Last, top the tortillas with your eggs, onions, cilantro, tomatoes and salsa and enjoy! I like to serve this with limes and squeeze them over the top before diving in! This is a great breakfast when you want to impress a guest but it is so easy to make! :)
