Lemon Popsicles with Strawberries and Mint

I am a HUGE fan of making popsicles at home for 2 reasons: 1- they are better for you 2- they are fun to create! :) 

It’s great to get in the kitchen with your kids and see what you have in the refrigerator that can help you create a new and delicious frozen treat! Here is what you need for this one:


3 lemons – juice

2  -3 cups water



1/2 cup frozen strawberries – can add more :)

2 teaspoons organic sugar  ( if you don’t want to make simple syrup or use sugar can substitute with Agave )

3 mint leaves

popsicle molds

Blender or Nutribullet

In a small pot on low heat add 1/3 cup of water, the mint leaves and the sugar and cook until the sugar dissolves – take out the mint leaves and discard them and set aside the syrup to cool. Meanwhile in the blender add the water, juice of 3 lemons, 2 or 3 frozen strawberries and the “mint simple syrup ” you made and blend until smooth. Next slice some of the frozen strawberries and add a few slices to each popsicle mold and then add the lemon mixture to each one. Place the popsicles in the freezer for a few hours and enjoy! My daughter LOVED these they were very refreshing for these hot summer days.
