
Peanut butter, Cereal and Chocolate Oat Bars – The Perfect After-School Snack!!!!!
School is back for almost everyone now, so I wanted to share with you a great after school snack I make in my house and keep on my kitchen island for hungry kids and adults! :)
Here is what you need:
2 cups old-fashion oats
1 cup plain cheerios
1/2 cup – chunky healthy peanut butter – I used Smart Balance
1 egg white
1/4 cup honey
1/2 teaspoon vanilla extract
2 tablespoon GrapeSeed oil
1/3 cup packed light brown sugar
1/4 or more cup semi-sweet chocolate chips
A pinch of salt
Cooking Spray
Next, in a large mixing bowl combine the egg white, peanut butter, oil, honey, vanilla and a pinch of salt and whisk well to combine. Then add in the oats, cheerios, brown sugar and chocolate chips and again mix well to coat everything evenly.
The last thing to do is spray a baking dish with cooking spray and then top it with parchment paper and then spray the paper with more cooking spray. Then press the oat mixture into the baking dish and bake at 350 degrees for 20 minutes until set and the edges are slightly browned.
After it’s done you can then easily lift the parchment paper out and let it sit for at least 10 minutes before cutting into bars. These may break a bit when cutting and not be perfect but they are so delicious! I leave them on my kitchen counter and my daughter and I both grab a bite when we need a snack. :)
