
Perfect Roasted Pumpkin Seeds!!!
It is almost Halloween and this is the best time to start carving your pumpkins and best of all roasting the seeds! I LOVE roasted pumpkin seeds, my mom did this with me as a kid with my brother and sister and I continue the tradition with my daughter Laila. Roasting pumpkin seeds are so easy, delicious and highly addictive. This is the way my mom taught me:
I would always watch my mom scoop out the inside with us, place them in a colander and separate the seeds out and then rinse them.
Next, it is very important to really dry them so I dry them with paper towels and then transfer them to a clean dish towel and let them site at least 10-15 minutes.
Then I make the traditional kind my mom did which is to coat them extra virgin olive oil and salt. However, I also make a sweet version that my taught loves with regular oil ( any you like that has no strong flavor) and some pumpkin pie spice – once they are cooked and out of the oven I toss them is some cinnamon sugar. :)
Then you just bake them at 350 degrees for about 20-25 minutes tossing them around a few times while cooking. Depending on your oven and how crispy you like them the time will vary so be sure to check on them!
I like to eat these right away and store the rest in mason jars for snacking on throughout the week! :)
