Pumpkin, Banana and Chocolate Chip Muffins !

I love fall and I also love banana bread and pumpkin bread, so I decided to combine the two and create a muffin inspired by both. Lets face it there is nothing better than pumpkin flavors when the season changes and when you add some banana and a hint of chocolate you make the most delicious muffin ever. :) I am NOT a baker at all so I really made this recipe up hoping it would work and it was amazing, the pumpkin really keeps these muffins moist and they are a new favorite in my house.

Here is what you need:


3/4 –  can of pumpkin

2  – very ripe bananas



1/4 – cup light brown sugar

1/2 – cup sugar

1 teaspoon vanilla extract

1/4 – cup butter  ( melted in the microwave )

1 teaspoon pumpkin spice

1/2  teaspoon cinnamon

1 egg

1 teaspoon baking soda

1 & 1/2  cups whole grain brown rice flour ( this helps make these healthier ) :)

1/3 – cup semi-sweet chocolate chips

muffin baking tray and muffin paper cups – I got these cute Halloween ones at Target

 

In a large mixing bowl add the melted butter and bananas and smash them and then add in the pumpkin, both sugars, pumpkin pie spice, cinnamon and mix well to combine.

Next, add in the egg and vanilla extract and again mix well to combine.

Next, add in the baking soda and flour and mix and then add in the chocolate chips and stir until everything is combined.

Then with a ice cream scooper or spoon fill each muffin cup with the mixture and make sure you fill them almost to the top.

Last, bake these at 350 degrees for 25 minutes and enjoy!!! These muffins are good I promise you will love them !!! :)
