Instructions
  1. In a mixing bowl add the apricot, soy, lime juice, olive oil and a pinch of salt - not much and some black pepper and whisk well to combine. Place pork tenderloin and marinade in a large plastic bag and marinate in the refrigerator for a few hours.
  2. Next, place marinated pork in a baking dish and roast it in the oven at 425 for about 20-25 minutes and then pour some water into the baking dish to create a sauce and turn down the heat to 350. Finish cooking for another 20 minutes or until done and the last 10 minutes spoon a little of the sauce over the top of the pork.
  3. When the pork is done let it rest for at least 8 minutes before cutting and enjoy! :)
