  1. Season the chicken breasts with some salt and pepper on both sides and add the oil to the pan on medium high heat and add the chicken and start to brown the first side and cook for about 3 minutes and then flip.
  2. Meanwhile, in a mixing bowl add the mayo, garlic powder and the chopped artichoke hearts and stir to combine and then pour the mixture over the chicken breasts in the sauté pan and cook for another 6-8 minutes until no longer pink and serve!
  3. Tip : Once I add the mayo mixture I will cover the chicken the last few minutes to make sure it is cooked all the way though :)
