Arugula and Spinach Pesto

Ingredients
- 1 cup fresh spinach leaves
- 1 cup Arugula
- 1/4 cup toasted pine nuts
- 1/4 cup grated parmesan cheese more if you like extra
- 1/4 cup extra virgin olive oil
- 1 lemon the juice
- salt and pepper

- Add the pine nuts to a small sauté pan on low heat and toast for a few minutes until golden and set aside.
- Next add all the ingredients except the parmesan cheese to a food processor and pulse until smooth. Last, add in the cheese and pulse again until everything is combined.
- Check the pesto for seasoning to see if it needs more salt and pepper and serve.
- This pesto is so easy and delicious and you can use it in multiple recipes. I serve this pesto with grilled chicken and shrimp, I add it to pasta as well as serve it with fresh sliced tomatoes etc. The possibilities are endless, so just store this pesto in your refrigerator and enjoy it anyway you like! :)
