Asian Peanut Zucchini Noodles with Chicken
Ingredients
- 1 store bought rotisserie chicken chicken breast taken off the bone - skin removed and cut into bite size pieces
- 1 large zucchini made into "noodles" with a Spiralizer
- 1/2 bag shredded slaw with carrots can find in produce section with the bagged lettuce
- 1-2 scallions chopped - use as much as you like
- 2 tbsp fresh Cilantro
- 2 tbsp roasted peanuts can chop if you like them smaller
Peanut Sauce
- 1/4 cup healthy creamy peanut butter
- 2 tbsp low sodium soy sauce
- 2 tbsp seasoned rice vinegar
- 1/4 cup low sodium chicken broth
- 1 large lime the juice
- 1/2 teaspoon Sriracha hot sauce more if you like more heat

- Make your zucchini noodles and set aside in a large mixing bowl. Then add in the chicken pieces, green onions, cabbage slaw mix and toss to combine.
- In a smaller bowl add all your peanut sauce ingredients and whisk well to combine. Then pour the peanut sauce all over the zucchini noodles and chicken and add a little bit at a time tossing it all around with two large spoons. You may not need all the sauce so add a little bit at a time.
- Once everything is coated transfer to a large serving bowl and top with cilantro and peanuts and serve with a lime wedge. I like to squeeze the lime over it before I eat this and if you have left over sauce just save it in the refrigerator for other things it is delicious.
