  1. Make your zucchini noodles and set aside in a large mixing bowl. Then add in the chicken pieces, green onions, cabbage slaw mix and toss to combine.
  2. In a smaller bowl add all your peanut sauce ingredients and whisk well to combine. Then pour the peanut sauce all over the zucchini noodles and chicken and add a little bit at a time tossing it all around with two large spoons. You may not need all the sauce so add a little bit at a time.
  3. Once everything is coated transfer to a large serving bowl and top with cilantro and peanuts and serve with a lime wedge. I like to squeeze the lime over it before I eat this and if you have left over sauce just save it in the refrigerator for other things it is delicious.
