Asian Stuffed Portabella Mushrooms with Ground Turkey

Ingredients
- 1 pound ground turkey
- 2 large radishes grated on cheese grater
- 1/2 orange or red bell pepper grated or chopped small
- 1/2 onion diced
- 2 garlic cloves minced
- 1 inch of ginger peeled and grated
- 2 TBSP Hoisin sauce
- 2 tablespoon low sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoon olive oil or coconut oil
- 1 can diced water chestnuts
- 4 large Portabella Mushrooms
- salt and pepper

Instructions
- Over medium heat add oil and and onion and a pinch of salt and cook about 5 minutes then add in the garlic and cook for another 2 minutes
- Next add in the ground turkey , ginger, radishes , bell pepper and some salt and pepper and cook until meat is no longer pink
- Next add in the water chestnuts, soy sauce, rice wine vinegar and hoisin sauce and cook about 5 minutes or until all the flavors are combined - turn off the heat and set aside
- On a baking sheet or dish spray bottom with cooking spray. Rub each mushroom with a little olive oil and stuff them each with the turkey mixture
- Bake at 350 degrees for about 25 minutes or until mushroom is cooked and filling is browned on the top
