I like to make these as individual servings - so using small baking dishes coat each one with a little extra virgin olive oil.
Next, place the asparagus tips over the top of the oil in each dish and season with salt and pepper.
Next, add in the tomatoes and season them with a bit of salt and pepper as well. Then sprinkle over the top the garlic powder and some parmesan cheese.
Then before baking drizzle the other tbsp of the olive oil over the top and bake at 350 degrees for about 12 minutes.
This is one of my favorite side dishes for a date night at home or a dinner party because it is so easy and each person gets there own dish. :)
