Baked Crab Cakes with Avocado Lime Aioli

Ingredients
- 9 oz Lump crab meat buy the good kind in the seafood section
- 1 egg beaten
- 1 tbsp shallot chopped fine
- 1 tbsp chives chopped fine
- 2 tbsp yellow bell pepper chopped fine
- 1 tbsp light mayo
- 1/2 cup light or reduced fat crackers whatever kind you like - crush them in a plastic bag
- 1/2 lemon or lime use what you have - the juice
- 1 tbsp fresh Cilantro chopped
- A pinch of salt and pepper
- coconut oil cooking spray
Avocado Lime Aioli
- 1/2 avocado inside scraped out
- 1 tbsp light mayo
- 1 teaspoon lime juice
- salt and pepper

- In a large mixing bowl add the light mayo, beaten egg, chives, cilantro, shallot, pepper, lime or lemon juice, crackers and some salt and pepper and mix well. Next, add in the crab meat and carefully mix to combine.
- Then form into small patties of your size choice and place them on a dish and let them sit in the refrigerator for an hour to set.
- Last, spray and baking sheet with the coconut oil cooking spray and bake at 400 degrees for about 10 minutes per side until slightly browned.
- While the cakes are cooking add the avocado aioli ingredients to a small food processor and blend until smooth. I transfer this to a snack size plastic bag and cut the corner tip to top the crab cakes! :) I also add a dot of hot sauce but this is optional!
