Baked Pumpkin Pasta with Chicken
Ingredients
- 2 -3 cups penne pasta - cooked
- 2 store bought rotisere chicken breasts - chopped and skin removed
- 2 pieces turkey sausage - out of casing
- 1/2 large white onion - chopped
- 3 garlic cloves chopped
- 1 (15oz) can pumpkin purree
- 1/4 cup pine nuts - toated ( in toaster oven 300 degress 3-4 minutes )
- 1/4 reduced fat milk
- 1 tablespoon fresh sage - chopped
- 1 cup chicken stock
- 1/4 cup or so of parmesan cheese
- 1/4 cup flat leaf parsely
- 2 tablespoons extra virgin olive oil
- cooking spray
- salt and pepper

- Preheat oven to 375 degrees - and cook penne to package instructions, drain and set aside. In a pan on medium heat add in the olive oil, onion and some salt and cook about 6 minutes then add in the garlic and cook another 2 minutes. Next add in the turkey sausage and cook until browned about 6-8 minutes.
- Next stir in pumpkin puree, chicken stock and sage. Mix together and add salt and pepper. Bring to a boil then lower the heat and simmer 5 minutes.
- Then stir in the chopped chicken, milk, pine nuts and parmesean cheese and simmer until the sauce is thickened slightly.
- Next add in the cooked pasta and parsley and gently mix all the ingredients together. Last add the mixture to a baking dish sprayed with cooking spray and sprinkle the top with a little more Parmesan cheese and bake for 30 minutes until the topping is golden brown and enjoy!
