  1. Preheat oven to 375 degrees - and cook penne to package instructions, drain and set aside. In a pan on medium heat add in the olive oil, onion and some salt and cook about 6 minutes then add in the garlic and cook another 2 minutes. Next add in the turkey sausage and cook until browned about 6-8 minutes.
  2. Next stir in pumpkin puree, chicken stock and sage. Mix together and add salt and pepper. Bring to a boil then lower the heat and simmer 5 minutes.
  3. Then stir in the chopped chicken, milk, pine nuts and parmesean cheese and simmer until the sauce is thickened slightly.
  4. Next add in the cooked pasta and parsley and gently mix all the ingredients together. Last add the mixture to a baking dish sprayed with cooking spray and sprinkle the top with a little more Parmesan cheese and bake for 30 minutes until the topping is golden brown and enjoy!
