Baked Sweet Potato Chips

Ingredients
- 1 large sweet potato- peeled - cut thin on a Mandolin
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh thyme
- 1 teaspoon paprika
- salt and pepper

Instructions
- Cut the sweet potatoes on a mandolin and then place them in a large mixing bowl and toss them with the oil, paprika, thyme and some salt and pepper and make sure each slice is coated.
- Then place the potatoes on a baking sheet and make sure they are in a single layer and bake at 400 degrees for 20 minutes turning them half way through. They will get brown and crisp and that is exactly how they taste the best!
