Baked Turkey Ricotta Meatballs

Ingredients
- 1 pound ground turkey
- 1/2 cup ricotta cheese
- 1/3 cup good parmesan cheese
- 1/4 cups Italian bread crumbs
- 1 egg
- 1 TBSP parsley I used lightly dried herbs from Gourmet Garden can find these in the produce section
- 1 TBSP basil I used lightly dried herbs from Gourmet Garden can find these in the produce section
- 2 TBSP Pomodoro Tomato Basil Sauce could also use 1 TBSP of Ketchup
- 1/2 TBSP garlic powder
Pomodoro Sauce ( can use a really good jared sauce)
- Fresh basil to add to the sauce and to top the meatballs
- salt and pepper
- extra virgin olive oil spray for baking the meatballs

- Start off by adding your meatball seasonings to a mixing bowl with out the ground turkey and ix well to combine.
- Once that mixture is completely combined, add in your 2 tablespoons of marinara sauce or 1 tablespoon of ketchup ether will work.
- Next, add in the ground turkey and season the meat with some salt and pepper then mix to combine. By adding the meat last you don't over mix and this will give you a soft meatball instead of a dense one.
- Then roll each meatball to the same size and place them on a baking sheet lined with foil and sprayed with extra virgin olive oil spray. Then also spray the tops of the meatballs with some olive oil spray too. ( The meatball mixture will be a little sticky so you can wet your hands with a little water and then they won't stick to your hands )
- Then bake the meatballs at 350 degrees for 15 minutes and then take them out of the oven and add them to your sauce.
- Once the meatballs are added to your tomato sauce add a bunch of fresh basil and cook for at least 30 minutes but can go longer of course.
- I add 2 jars of sauce usually and sometimes I add a little chicken broth as well if I am cooking the meatballs longer than 30 minutes.
- Them simply add them to your favorite pasta, polenta or anything else you love to eat them with and enjoy!
- These meatballs are light, so easy to make and delicious, I hope you like them as much as my friends and family do!
