  1. In a pan on medium heat add 1/2 the olive oil, zucchini, mushrooms and a pinch of salt and pepper and cook about 5 minutes and then add in the tomatoes and turn off the heat. Cook the turkey bacon in a pan on medium heat and then set aside to drain on paper towels and then chop.
  2. Next in a ramekin or any small dish that is oven safe add a little more olive oil and spread around the bowl and then add in the vegetables, cooked chopped turkey bacon and make a well in the center of them and break the egg into it and then top with parmesan cheese and some salt and pepper. Then bake at 375 degrees for about 20 minutes, make sure you check it to not over cook your egg so that it is still a little runny and enjoy!!!
  3. I top this wth fresh basil and it is delicious!!!
