Baked Zucchini Fries
Ingredients
- 2 zucchini cut into small strips
- 2 cups panko bread crumbs you can add parmesan cheese to the breadcrumbs if you like
- 2 eggs beaten
- Olive oil cooking spray
- salt and pepper
Dipping Sauces
- buttermilk ranch dressing see my recipe under the "Light Fare" tab
- healthy marinara sauce

Instructions
- Take the zucchini strips and add your beaten egg to a bowl, then add your flour with some salt and pepper and then add the panko - I also add salt and pepper into the panko crumbs. ( you can also add parmesan cheese to your breadcrumbs if you like)
- Next start dredging your zucchini - first in the flour, then in the egg and then in the breadcrumbs. Make sure you have a wire rack to put over your baking dish and spray it with the olive oil spray. Then place each zucchini on the sprayed wire rack.
- Bake these at 425 for 20-22 minutes until golden brown and serve. I love these in ranch dressing but my daughter loves them with warm marinara sauce so serve them with your favorite! :)
