Best Chicken Burgers

Ingredients
Chicken
- 1 lb ground chicken
- 1 small shallot chopped
- 2 garlic cloves chopped
- 1/4 tsp dried oregano
- 1/4 cup zucchini chopped
- 1/4 cup yellow squash chopped
- 1/4 cup button mushrooms chopped
- 1-2 tbsp fresh basil chopped
- 1/4 cup light mayo
- 2 tbsp extra virgin olive oil
- salt and pepper
Toppings
- lettuce and tomato
- Bun I used Nature's Own 100% whole grain Sandwich Rounds - but use what you like

Instructions
- In a pan on medium heat add 1 tablespoon of olive oil, shallot, zucchini, squash, a pinch of salt and pepper and cook about 6 minutes until tender and then add in the mushrooms, garlic and oregano and cook about 5 more minutes and then set aside and let cool.
- In a small mixing bowl add the chopped basil, a pinch of pepper and the light mayo and mix well to combine. Set aside ( this basil mayo is so easy and I use it on a lot of things )
- In a large mixing bowl add the ground chicken, 1 tablespoon of the basil mayo, the vegetables mixture and some more salt and pepper and mix to combine.
- The with your hands form patties with the chicken mixture ( it will be sticky and kinda hard to do but trust me they will come out amazing )
- Then in a pan on medium- high heat add the other tablespoon of olive oil and cook the patties about 5 minutes on each side or until no longer pink inside and set on paper towels to remove excess oil.
- On the bun - use the basil mayo mixture and some lettuce and tomato and enjoy!!! These burgers are great and they are my daughters favorite !!!
