Best Chicken Meatballs
Ingredients
- 1 pound ground chicken
- 1 egg white
- 1/4 cup italian bread crumbs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup flat leaf parsley chopped
- 1 tablespoon fresh basil chopped
- 2 tablespoons reduced fat milk
- 1 large garlic clove - grated with cheese grater
- 1/2 medium yellow onion - grated with a cheese grater
- 1 jar good healthy marinara sauce
- 1 cup chicken stock
- 2 tablespoons olive oil
- salt and pepper

- In a large mixing bowl add the milk, egg white, cheese, herbs, grated onion, garlic, breadcrumbs and some salt and pepper and mix well to combine - then add in the ground chicken and mix well
- Then in a pan on medium high heat add olive oil and take about 1 tablespoon of the chicken mixture and roll it in your hands and carefully place the meatballs in the pan ( this is messy bc mixture will be sticky but it's worth it :) turn them once while cooking to make sure all sides get a brown crust on them- do not cook them all the way- once both sides have browned your going to transfer them to the sauce
- In a large pot on medium heat add in the marinara sauce and 1 cup of chicken stock and start to warm up the sauce - then carefully add in the meatballs and continue to cook them in the sauce - I cover them and let them go about an hour or so bc I think the longer they cook the better but they will be cooked through in about 25-30 minutes. Transfer them to serving bowl and enjoy!
- I serve these with gluten free or whole grain pasta but you can make meatballs subs with them or anything you like :)
