Brussels Sprout Salad with Warm Turkey Bacon Vinaigrette
Ingredients
- 1 9 oz bag shaved brussels sprouts I found these at Target
- 1/2 cup Gala apple skin off and chopped
- 2 tbsp toasted sliced almonds
- 2 slices of turkey bacon - I used Oscar Mayer ( can also just use regular bacon or pancetta )
- 3 tbsp apple cider vinegar
- 1 teaspoon honey
- 1 teaspoon honey dijon mustard can find this right next to the classic dijon mustard now
- 1/4 cup red onion chopped
- 1 &1/2 tbsp extra virgin olive oil
- salt and pepper

- In a large mixing bowl add the brussels sprouts, toasted almonds, apple and a pinch of salt and pepper and mix well and set aside.
- In a sauté pan add the turkey bacon and cook about 2 minutes on each side and then take it out of the pan. Next add the oil to that same pan and add in the red onion and cook about 2 minutes and then add in the vinegar, dijon mustard, honey and chop the turkey bacon and add that back in as well and whisk and cook it a few minutes to warm through then pour the vinaigrette all over the salad and toss well to coat.
- Check the salad for seasoning and add more salt and pepper if necessary and enjoy! I think this salad gets better the longer it sits and it is even good cold the next day! :)
