  1. Pour the chicken stock into a pot with a pinch of salt and bring to a boil - then add in the brussels sprouts and cook about 4 minutes - drain but keep the cooking broth and set aside
  2. In a pan on medium heat add the olive oil and shallots and pancetta and cook for about 5 minutes until shallot is soft and pancetta is crisp- then add in the garlic and cook for another 2 minutes
  3. Next add in the brussels sprouts and sauté for about 5 minutes until they begin to get golden brown and season with some salt and pepper
  4. Last add in 1/2 cup of the broth you cooked the brussels sprouts in and cook for about 4 minutes until broth is almost gone and serve!
  5. If you don't love brussels sprouts you will after you try this! :)
  6. Tip: I also make these with Turkey bacon instead of pancetta and its still delicious!
