Brussels Sprouts with Pancetta
super easy
Ingredients
- 1 pound Brussels Sprouts ( trimmed) or I make this with a bag of frozen ones all the time (defrosted) as a time saver to have them whenever I need them :)
- 2 tbsp olive oil
- 3 slices of pancetta
- 1 shallot chopped
- 2 garlic cloves minced
- 2-3 cups chicken broth low sodium
- salt and pepper

- Pour the chicken stock into a pot with a pinch of salt and bring to a boil - then add in the brussels sprouts and cook about 4 minutes - drain but keep the cooking broth and set aside
- In a pan on medium heat add the olive oil and shallots and pancetta and cook for about 5 minutes until shallot is soft and pancetta is crisp- then add in the garlic and cook for another 2 minutes
- Next add in the brussels sprouts and sauté for about 5 minutes until they begin to get golden brown and season with some salt and pepper
- Last add in 1/2 cup of the broth you cooked the brussels sprouts in and cook for about 4 minutes until broth is almost gone and serve!
- If you don't love brussels sprouts you will after you try this! :)
- Tip: I also make these with Turkey bacon instead of pancetta and its still delicious!
