Buffalo Chicken Meatballs
Ingredients
- 1 pound ground chicken
- 1/4 cup celery chopped fine
- 1/3 cup grated carrot I do this on a cheese grater
- 1/2 TBSP garlic powder
- 1/2 TBSP Franks hot sauce
- 2 scallions chopped
- 1/4 cup panko bread crumbs
- 1 egg
- Extra virgin olive oil cooking spray
- Ranch or Blue Cheese Dressing I used Ranch but use what you like
- Frans Hot Sauce about 1/4 cup or more at the end for coating the meatballs
- salt and pepper

- In a large mixing bowl add the egg, bread crumbs, 1/2 TBSP hot sauce, chopped celery, carrot, garlic powder and mix to combine.
- Next, add in the ground chicken and season with salt and pepper and mix with a spoon to combine.
- Pre-heat the oven to 400 degrees spray a baking sheet with the cooking spray. Then with a teaspoon, scoop out some of the mixture and roll small bit size meatballs with your hands and place them on the baking sheet.
- Next, spray the top of the meatballs with some more of the cooking spray and bake for 15 minutes and I flip them once half way through.
- Once the meatballs are cooked through take them put an place in a mixing bowl with more Franks hot sauce - use as much or little as you like.
- Last, transfer the meatballs to a serving tray and drizzle them with ranch or blue cheese. I like to decorate the tray with carrot and celery and serve with small plastic forks! Theses are great for a party and for football season !!!
