In a food processor add the cauliflower and pulse about 3 minutes until it has a rice like texture and set aside.
In a large sauté pan add the oil and allow it to heat up 2 minutes, and then add in the cauliflower, chives, soy sauce and some salt and pepper and cook about 3 minutes .
Next, beat the eggs and add them to the cauliflower and stir while cooking until everything is combined and cooked. Last, stir in the sesame oil and cook another minute and serve.
I created this last night and I am absolutely sold on this healthier version of rice it was so delicious! :)
You could make this even heartier as a main dish and add vegetables, chicken, beef or shrimp.
