Cauliflower Mash
super easy
Ingredients
- 1 head of cauliflower chopped
- 3 cups chicken stock ( low sodium ) or vegetable broth
- 1 or 2 garlic cloves cut in half
- 1 tbsp reduced fat cream cheese
- 1 tbsp Parmesan cheese
- 2 tbsp light butter
- 1 tbsp reduced fat milk
- salt and pepper

Instructions
- Cut cauliflower into pieces and place in a pot of chicken stock with the garlic and bring to a boil and cook until tender about 10 minutes.
- Drain cauliflower and add to a food processor with the garlic and add the cream cheese, butter, milk, parmesan cheese and some salt and pepper and blend until smooth.
- This is the perfect side dish to replace mash potatoes and my daughter absolutely loves is!
