Cheese Pasta with Grilled Chicken and Spinach
Ingredients
- 2 cups gluten free pasta - I used tri-colored spirals
- 3 chicken breasts - cut into bite size pieces
- 1-2 cups cups fresh spinach - chopped ( add as much as you like )
- 1/4 cup reduced fat cream cheese
- 1 shallot chopped
- 3 garlic cloves chopped
- 1 teaspoon dried thyme
- 3 tablespoons extra virgin olive oii
- 1 lemon
- 1/2 cup pasta water - reserved from cooking the pasta
- salt and pepper
- parmesean cheese ( for topping but optional )

Instructions
- Cook pasta to package instructions - drain but do not rinse ( reserve 1/2 pasta water )
- Meanwhile add chicken pieces to a bowl with 2 tablespoons olive oil, thyme and salt and pepper and toss to combine - then on a grill pan on the stove top cook the chicken about 10 minutes ( 5 minutes per side ) or until no longer pink - set aside and cover to keep warm
- In a large pan on medium heat add the other tablespoon of olive oil and the shallots with a pinch of salt and cook about 6 minutes until tender and then add the garlic and cook another 2 minutes
- Next add in the pasta, cream cheese, spinach, 1/2 lemon juice and chicken and toss until cheese has melted and add the pasta water in to thin out the sauce - serve immmedialty and enjoy!
- I top this with parmesean cheese too! :)
