Cheesy Zucchini and Brown Rice

Ingredients
- 1 bag Brown Rice I use 10 minute - Boil in a Bag - so easy
- 1 zucchini chopped small
- 1/2 cup shredded cheddar cheese blend
- 1 tbsp extra virgin olive oil
- 1 tbsp butter
- 1 tbsp low fat milk
- 1 teaspoon dried oregano
- 1 shallot chopped
- 1 clove garlic chopped
- salt and pepper

Instructions
- Boil the brown rice and then drain and set aside. Next, in a sauté pan add the oil, shallots and garlic with a pinch of salt and cook about 3 minutes and then add in the oregano and chopped zucchini, some more salt and pepper and cook while stirring about 6 minutes.
- Then add in the rice, 1/3 cup of the cheese, butter and the milk and cook 2 minutes until cheese has melted. Last, transfer the rice to a baking dish and top with the remaining cheese and bake at 350 for 8 minutes and serve.
- This rice is so good and the best part is you can make it in advance and then bake it when you are ready to eat. :) * For extra flavor you can also boil the rice in vegetable or chicken stock.
