Creamy Asparagus Soup

Ingredients
- 1 bundle fresh asparagus cleaned and ends cut off / chopped
- 1 shallot chopped
- 1 teaspoon garlic powder
- 3 cups low-sodium chicken stock or vegetable broth
- 1 lemon juice
- 2 tbsp flat leaf parsley
- 1 tbsp Coconut oil
- 1 tbsp 1/3 less fat cream cheese room temperature
- salt and pepper

Instructions
- In a pot on medium heat add oil and shallots with a pinch of salt and cook about 4 minutes and then add in the asparagus, garlic powder and some more salt and pepper and stir and cook another 3 minutes.
- Next add in the chicken stock, 1 tbsp of the parsley and half the lemon juice and cook covered about 15 minutes. Then add the cream cheese and the other tbsp of parsley and transfer to a blender - carefully blend with you hand over the top of the blender with a kitchen towel.
- Once the soup is smooth check it for seasoning and see if it needs a bit more lemon juice and salt and pepper and enjoy!! I LOVE this soup! :)
