Creamy Broccoli and Cheese Soup

Ingredients
- 1 16 oz bag frozen broccoli florets thawed
- 1 cup fresh spinach leaves
- 1 large shallot chopped
- 1 large clove garlic chopped
- 1 tbsp light butter
- 1 tbsp extra virgin olive oil
- 1/2 teaspoon dried oregano
- 2 cups low sodium chicken broth
- 2-3 tbsp light sour cream I used 2 sometimes I add more
- 1/2 cup reduced fat shredded cheddar cheese or a cheese blend if you like
- salt and pepper

Instructions
- In a pot add the butter, oil, shallots, garlic, oregano and a pinch of salt and cook about 4 minutes and then add in the broccoli and cook another 3 minutes.
- Next add in the chicken broth and bring to a boil and cook 10 - 15 minutes until stems are tender. Next add in salt, pepper, and the spinach and and stir until the spinach welts.
- Last, add in the sour cream and cheese and cook another 2 minutes until everything is melted and combined.
- Then with a hand held emerson blender - blend until smooth and serve! :) I serve this with a little more cheese on top and a touch more sure cream.
