In a pot add the butter, oil, shallots, garlic, oregano and a pinch of salt and cook about 4 minutes and then add in the broccoli and cook another 3 minutes.
Next add in the chicken broth and bring to a boil and cook 10 – 15 minutes until stems are tender.
Next add in salt, pepper, and the spinach and and stir until the spinach welts.
Last, add in the sour cream and cheese and cook another 2 minutes until everything is melted and combined.
Then with a hand held emerson blender – blend until smooth and serve! :)
I serve this with a little more cheese on top and a touch more sure cream.
