Creamy Chicken and Orzo
Ingredients
- 1 cup tri-colored orzo
- 3 cups low sodium chicken broth
- 1 pack chicken tenders or 2 breasts cut into bite size pieces
- 1 small onion chopped
- 1 carrot peeled and chopped
- 1 stalk celery chopped
- 2 cloves garlic chopped
- 1 teaspoon italian seasoning
- 1-2 tbsp flat leaf parsley chopped
- 1 & 1/2 tbsp extra virgin olive oil
- 1 tbsp butter
- salt and pepper

Instructions
- Boil the orzo in the chicken broth and then leave in the pot and do not drain and set aside.
- Add the oil a large sauté pan with the onion, carrots, and celery with a pinch of salt and cook until tender about 6 minutes and then add in the Italian seasoning and garlic and cook another 2 minutes.
- Then add in the butter and chicken pieces and season the chicken with some salt and pepper and cook about 8 minutes until no longer pink. Next, add in the orzo with what ever broth is left in the pot to the chicken mixture and stir to combine.
- Last, add a little more chicken broth if needed and the flat leaf parsley and serve. This dish is so easy and delicious, my family loves it!!!! :)
