Curry Chicken Salad with Pumpkin Seeds
Ingredients
- 1 Store bought plain Rotisserie chicken skin off and chicken cut off the bone and chopped or shredded
- 1/4 cup non fat plain greek yogurt
- 1 tbsp mayo
- 1 tbsp yellow curry powder
- 1/2 teaspoon garlic powder
- 1 lemon juice
- 1 scallion chopped more if you like
- 1 tbsp falt leaf parsley optional - chopped
- 1/2 teaspoon Organic Blue Agave
- 1 tbsp raw pumpkin seeds for a crunch
- healthy bread I use a quinoa multi-grain
- salt and pepper

- Take the chopped chicken and add it to a large mixing bowl with the pumpkin seeds - my chicken was small so I did not have a ton of meat - if you need more yogurt or mayo etc add as needed. :)
- Then in another bowl add all the other ingredients and mix well to combine. Taste the curry sauce to see if it needs more seasoning ...salt, pepper etc.....
- Next, pour the curry mixture all over the chicken and toss well to combine. Then store the chicken salad in the refrigerator for at least and hour to let all the flavors combine.
- I love this chicken salad and I serve it on healthy bread, crackers over greens or anything else you can think of!
