Curry Shrimp with Vermicelli
Ingredients
- 1 pound deveined raw shrimp
- 1 pack brown rice Vermicelli or the regular kind if you can't find this
- 1 tbsp yellow curry powder
- 1 tbsp HOT yellow curry powder
- 1 shallot chopped
- 1 teaspoon garlic powder
- 1 tbsp thai basil can find at any nursery where they sell herbs
- 1 13. 5 can reduced fat coconut milk
- 1 lime juice
- 1-2 tbsp peanut oil
- salt and pepper
- 2 tbsp peanuts chopped for garnish
- SRIRACHA Hot Chili Sauce optional for more heat if you like

Instructions
- Add the oil to the pan and cook the shrimp about 3 minutes with some salt and pepper but do not fully cook. Take the shrimp out and set aside. Then in the same pan add the shallot, curry powder, garlic powder and a pinch of salt and pepper and cook for about 8 minutes.
- Next, add in the coconut milk, lime juice, thai basil and some more salt and pepper and cook another 5 minutes and then add the shrimp back into the sauce and finishing cooking the shrimp.
- For the noodles, just add them to a bowl of hot water until soft and then drain and add them to the shrimp mixture and toss. ( add hot sauce at the end of you like )
- Last, add in the chopped peanuts and serve! :)
