Add the oil to the pan and cook the shrimp about 3 minutes with some salt and pepper but do not fully cook. Take the shrimp out and set aside. Then in the same pan add the shallot, curry powder, garlic powder and a pinch of salt and pepper and cook for about 8 minutes.
Next, add in the coconut milk, lime juice, thai basil and some more salt and pepper and cook another 5 minutes and then add the shrimp back into the sauce and finishing cooking the shrimp.
For the noodles, just add them to a bowl of hot water until soft and then drain and add them to the shrimp mixture and toss. ( add hot sauce at the end of you like )
