Egg in Hole with Tomato
Ingredients
- 1 slice your favorite healthy bread (I used Sprouted Rye from Trader Joe's)
- 1 egg
- 1 slice tomato center cut out
- salt and pepper
- flat leaf parsley garnish

- Lightly toast your bread in the toaster and then transfer to a cutting board and cut a hole in the center.
- In a pan on medium- low heat add the butter and once melted add in the toast- top it with the tomato ring and then crack the egg inside the middle. Sprinkle some salt and pepper on top and let cook about 2-3 minutes to set the bottom and then transfer the pan to your oven and broil it about another 5 minutes until the top "sets" but make sure to not over cook it so it's still a little runny.
- Take it out of the oven and with a spatula remove the toast and transfer to a plate - top with some fresh parsley and enjoy!!!
