Egg Salad Open Faced Sandwich with Radishes

Ingredients
- 1 large organic egg boiled
- 1-2 slices tomato
- 1/4 cup butter lettuce
- 1 english muffin slice 1
- 1 tbsp light mayo
- 1/8 tesp dijon mustard
- 12 tbsp radish grated in cheese grater
- salt and pepper

- In a pot of cold water add the egg - place on stovetop and bring water to a boil and cook the egg about 8 minutes then drain and rinse under cold water - peel it and chop it and place in a mixing bowl
- In the mixing bowl add, mayo, mustard, shredded radishes, and salt and pepper to taste - meanwhile toast the english muffin in the toaster oven then take it out and set aside
- Top english muffin with lettuce, tomato and egg salad and enjoy! I make this for breakfast all the time its so easy but delicious!
