Eggplant Meatballs

Ingredients
- 1 eggplant lightly peeled and cut into cubes
- 1 teaspoon garlic powder
- 1 tbsp fresh basil chopped
- 1 cup Italian seasoned breadcrumbs
- 1 egg
- 1/4 cup grated parmesan cheese
- 1 tbsp extra virgin olive oil and a bit more to coat baking sheet
- 1/4 cup vegetable broth or chicken broth whatever you have
- salt and pepper
- 1 jar healthy marinara

- In a large saute pan add the olive oil and eggplant and season with garlic powder, vegetable broth and some salt and pepper. Cook until the eggplant is tender about 10 minutes and then transfer to a blender or food processor and pulse until smooth.
- Next, in a large mixing bowl add the egg, parmesan cheese, basil, breadcrumbs and mix to combine. Then add in the eggplant and mix again until everything is combined.
- Next, roll the eggplant mixture into "meatballs" with your hands and this will be sticky but don't worry it is suppose to be. :) Transfer the meatballs to a baking sheet that has been coated with some olive oil and bake at 350 degrees for about 20 minutes until golden brown and firm.
- Transfer the "meatballs" to a pot with your favorite healthy marinara sauce and cook them in the sauce for at least 10 minutes and enjoy!
- These meatballs are SO amazing you will not miss the meat I promise! :)
