  1. Place your eggplant slices on a baking sheet lined with foil and spray the foil with the olive oil cooking spray. Then lightly season the top of the eggplant with some salt and bake them at 400 degrees for 15 minutes.
  2. Next, take the eggplant out and start to make your pizza with all your toppings. I did the tomato basil sauce first and then I added the mozzarella cheese. Then I sprinkle the parmesan cheese and the dried oregano over that. Last, I add the pepperoni to some and slices grape tomato the the others and season with some black pepper and salt on the ones with tomato.
  3. Then place them back in the oven for about another 5 minutes until the cheese is melted. Then when they come out you can add your fresh basil leaves and enjoy!
  4. These are a great low carb option, easy to make and so delicious!
