Instructions
  1. Heat 2 tablespoons of oil over medium heat in a large pot and add chopped – carrots, celery, fennel and onion about 10 minutes until soft. (Add salt to veggies)
  2. Next add garlic cook for 2 minutes then push vegetables to side of pot, in the middle of the pot add the sausage (breaking it up with spoon)
  3. Add another tablespoon of olive oil and then add in the ground chicken and season it with 2 tablespoon of both herbs and salt and ground black pepper.
  4. After both meats are browned and cooked through add 1 can of drained and rinsed Cannelloni beans and stir everything together.
  5. Next add the jar of marinara sauce and stir to combine.
  6. Last add in the chicken broth and bring to a simmer for 20- 45 minutes or more.
  7. For the pasta you can add it before serving and cook it in the soup – or you can cook in separate pot and add it to the individual bowls before serving.
  8. Top with cheese.
