Cook turkey bacon - drain on paper towels - chop and set aside
In a mixing bowl add the eggs, half and half, american cheese , spinach, garlic powder and some salt and pepper - whisk well and set aside
Next in a medium sauté pan add in the coconut oil, olive oil and onion with pinch of salt and cook about 5 minutes until tender and then add in the asparagus and a pinch more salt and pepper and cook about another 4 minutes.
Next add the chopped turkey bacon to the egg mixture and mix then pour it over the onions and asparagus and make sure it coats them evenly and cook a few more minutes until the sides of the egg mixture "set" and then top with the parmesan cheese and place in oven on broil for about 4 minutes until the top is cooked and sets.
This is a smaller frittata I make for my daughter and I on the weekends and it is delicious!
Put any leftovers in the refrigerator and they are great to heat up in the microwave the next day! :)
