Gluten Free Mushroom and Lemon Orzo

Ingredients
- 1 cup gluten free orzo I found this at Fresh Market
- 6 large white button mushrooms sliced
- 1 clove garlic chopped
- 1 tbsp lemon thyme or regular if you can't find lemon - I grow this in my yard
- 1 tbsp flat leaf parsley chopped
- 1 lemon juice and zest- more if needed
- 3 tbsp extra virgin olive oil more if needed
- 1 tbsp grated parmesan cheese
- salt and pepper

Instructions
- Boil the gluten free orzo to package instructions and then drain - rinse and set aside.
- In a large sauté pan - add 1 tbsp of the oil and the garlic and cook for about 3 minutes and then add in the mushrooms and some salt and pepper and cook for about 8 minutes and then add in the herbs, cooked orzo, lemon juice and zest, the rest of the oil and some more salt and pepper and cook for a few more minutes until everything is combined.
- Check the orzo for seasoning and add more oil or lemon juice if it seems dry. I top this with a little parmesan cheese and it's so delicious! :)
