Gluten Free Mushroom and Lemon Orzo

  1. Boil the gluten free orzo to package instructions and then drain – rinse and set aside.
  2. In a large saut̩ pan Рadd 1 tbsp of the oil and the garlic and cook for about 3 minutes and then add in the mushrooms and some salt and pepper and cook for about 8 minutes and then add in the herbs, cooked orzo, lemon juice and zest, the rest of the oil and some more salt and pepper and cook for a few more minutes until everything is combined.
  3. Check the orzo for seasoning and add more oil or lemon juice if it seems dry. I top this with a little parmesan cheese and it’s so delicious! :)
