Green Beans and Butternut Squash

Ingredients
- 1 bag fresh green beans wash and cut in half
- 1 small butternut squash peeled and cubed
- 1 shallot chopped
- 1 garlic clove chopped
- 1 tbsp extra virgin olive oil
- 1 tbsp light butter
- salt and pepper

Instructions
- Place cubed butternut squash on a baking sheet lined with foil - add olive oil and salt a pepper and coat evenly. Bake at 375 degrees for about 15-20 minutes until fork tender.
- Meanwhile - blanch the green beans. Add them to a pot of boiling water and cook about 2-3 minutes and them take them out and put them into a bowl of ice water to stop the cooking process - drain and set aside.
- Next in a sauté pan on medium heat and 1 TBSP of the olive oil and the butter and cook the shallot for about 5 minutes and then add in the garlic and cook another two minutes. Then add in the green beans and cooked butternut squash and season with more salt and pepper.
- Cook for a few minutes until all the flavors are combined and serve!

I made this for Thanksgiving how would you recommend I warm it up tomorrow. Microwave???
