Instructions
  1. Place cubed butternut squash on a baking sheet lined with foil - add olive oil and salt a pepper and coat evenly. Bake at 375 degrees for about 15-20 minutes until fork tender.
  2. Meanwhile - blanch the green beans. Add them to a pot of boiling water and cook about 2-3 minutes and them take them out and put them into a bowl of ice water to stop the cooking process - drain and set aside.
  3. Next in a sauté pan on medium heat and 1 TBSP of the olive oil and the butter and cook the shallot for about 5 minutes and then add in the garlic and cook another two minutes. Then add in the green beans and cooked butternut squash and season with more salt and pepper.
  4. Cook for a few minutes until all the flavors are combined and serve!
