First roast the beet ( I had this on hand from roasting beets earlier in the week ) but here is how I did it: Wash and strub clean the beets and cut off the top and cover with 1-2 tablespoon olive oil then wrap them in aluminum foil and put it in the oven at 375 degrees - cook about 45-50 minutes ( I always roast more then 1 beet and use it for many dishes- once they come off the heat and cool scrape the skin off and set aside
Next heat about 2 cups of salted water to a boil and add the green beans and cook about 4 minutes. Then take the green beans out and then put them in a bowl of ice water to stop the cooking process and drain
Meanwhile toast the sliced almonds in a sauté pan over low heat for about 3 minutes - then take out and set aside
In the same sauté pan add oil, butter and shallot and cook about 4 minutes until shallot is tender then add in the greens beans, chopped beets and almonds and cook for another 3-4 minutes until everything is coated and warm and serve!
