Grilled Corn Salad with Avocado

Ingredients
- 3 ears corn husk removed
- 3 vine ripe tomatoes
- 1 can black beans drained and washed
- 1 tbsp jalapeno pepper seeds out and chopped
- 2 tbsp fresh Cilantro chopped
- 1/3 cup orange bell pepper - chopped
- 1 avocado scooped out and chopped
Dressing
- 2 tbsp red onion grated on fine cheese grater
- 1/3 cup fresh lime juice add more if you like more lime flavor
- 1 tbsp red wine vinager
- 1 tbsp extra virgin olive oil
- 1 teaspoon honey dijon mustard can find next to regular dijon mustard
- 1 teaspoon pure maple syrup
- salt and pepper

- Add some olive oil to a grill pan and season the corn with salt and pepper - grill the corn for about 8 minutes turning them to cook on all sides. Take the corn off the heat and with a knife remove the corn and add it to a large mixing bowl.
- Next, add the other ingredients to the mixing bowl and toss to combine. For the dressing: Add those ingredients to a small mixing bowl and whisk well and then pour it over the corn salad and mix well.
- Last, put the corn salad in the refrigerator for all the flavors to combine and then top it with the avocado before serving and enjoy! :)
