Ground Turkey and Quinoa Protein Bowl

Ingredients
- 1 pound ground turkey
- 1 cup Quinoa
- 2 cups low sodium chicken broth
- 5 Plum tomatoes chopped into large pieces
- 1/2 white onion - chopped into large pieces
- 2 cloves garlic chopped
- 1/3 cups fresh basil
- 1 & 1/2 tbsp extra virgin olive oil
- salt and pepper

Instructions
- In a large saute pan add the the olive oil and ground turkey and some salt and pepper and cook until no longer pink. Also, cook the quinoa in the chicken broth to package instructions and set aside.
- Meanwhile, in a blender or food processor add the tomatoes, onion, garlic and some salt and pepper and pulse until everything is in small pieces but not completely smooth.
- Next, add the tomatoes mixture to the ground turkey and the basil and simmer for about 15 minutes until the sauce and reduced and then add in the quinoa and cook another 5 minutes.
- The dish is so easy, healthy and delicious! I like to top it with more fresh basil and enjoy!
