Healthy Enchilada Sauce

Ingredients
- 3 TBSP Safflower oil or any flavorless oil- I love this oil - lower is Sat. fat and many health benefits
- 3 TBSP Organic Chickpea Flour so amazing can find even at Kroger
- 8 oz can tomato sauce
- 1 cup low sodium organic chicken broth
- 1 TBSP ground chipotle chili
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- salt and pepper

Instructions
- In a medium pot add the oil and chickpea flour and cook on medium stirring until it bubbles a few minutes. Next, add in all the dry seasonings and cook another few minutes.
- Then add in the tomato sauce a pinch of salt and pepper and the chicken broth and cook a few more minutes until it thickens and is all combined.
- Then transfer the enchilada sauce to a glass jar or storage container. You can make this ahead of time and keep it until you make it for your recipes it is very versatile and delicious! :)
