Heirloom Tomato and Egg Salad

Ingredients
- Heirloom tomatos cut in pieces
- 2 eggs hard boiled
- 1 green onion chopped
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- salt and pepper

Instructions
- Hard boil the eggs - place eggs in a pot of water and bring it to a boil - cook the eggs for 8 minutes and then rinse under cold water. Then peel the eggs and cut them in half and place on a tray.
- Next, add the tomatoes to the tray and top with the green onions and some salt and pepper. Last, drizzle the tomatoes with the olive oil and lemon juice and serve!
